Glenfiddich 21 Year Caribbean Rum Cask

Glenfiddich 21 Year Caribbean Rum Cask Taste ProfileStats – 40% alcohol, Speyside, 2010 bottling
Price – $120
Color – Reddish amber
Nose – Sweet and yeasty, and fruit, maybe like bananas foster
Palate – Very smooth, not too spicy and the fruit tastes like dark ripe plums.  Rich vanilla shines without being sweet.  The half-way point has lots of floral heather balanced with golden raisins and honey at the finish.  A nutty richness rounds this out like a nice spice cake or fruitcake.  Some dry oak at the finish as well, no surprise from the age of this one.  Great complex and unique character here.

Nose – Clove or cinnamon spice, apples, almost brandy-like
Palate – The brandy quality carries over to the taste.  The spice is in the forefront and dominant.  Smooth and sweet and a light floral note.  A light touch of bitterness, like a burnt charcoal, also a faint citrus character.  Some vanilla and a dry oak with some grass.  The flavors gradual fade to the finish which has a modest iodine medicinal profile.  Very complex.
