Nose – Sweet and floral
Palate – Another of Colorado’s expanding collection of distilleries, Black Canyon is spice forward with hints of anise and clove. While a sour mash corn whiskey, it has some flavors reminiscent of rye, but still remains sweet as you would expect. It’s also grassy and slightly rich. The spice heats up again at the finish, but it is lighter to the touch. This is a very drinkable whiskey, which makes it a great session whiskey. Not bad for those trying to track down some of The Centennial State’s unsung whiskeys.

Mellow Corn


Mellow Corn Taste ProfileStats – 50% alcohol, straight corn whiskey distilled by Heaven Hill, Bardstown, KY
Price – $15
Color – Pale blonde
Nose – Sweet, grassy, and white peach
Palate – The thought of corn whiskey usually conjures “Thunder Road” images of bootleggers running moonshine though the Smoky Mountains in modified Fords with Robert Mitchum. But in actuality it has regained some popularity lately as bourbon imbibers are tracking down the origins of their favorite drink. Playing up both the Kentucky backwater angle as well as the whiskey genesis angle, Heaven Hill refers to Mellow Corn as the “kissing cousin to Bourbon.”  Being a straight corn whiskey requires that it be made from at least 81% corn, and “Bottled in Bond” signifies that it spent at least 4 years in an oak barrel and weigh in at least 100 proof. Mellow Corn is soft with a sweet beginning, but the spice builds quickly and carries all the way through the dry finish. At the back palate are some heather and alfalfa grassy notes. A dry and bitter tang of citrus zest and apple peels mixes with brown sugar and toasted coconut. This is raw and young, maybe brash and spirited at times, but considering it’s only $15 a bottle (that’s less than $1.19 a shot!), you can’t really complain.
